Wash and dry your strawberries. They will need to be dry in order to dip them.
*Heat the chocolate and coconut oil in a double boiler over medium heat stirring frequently until the chocolate is just smooth. Then remove from heat.
Pour some of the melted chocolate into a glass tumbler or measuring cup. Make sure to protect yourself and your counters from the heat by using a potholder or oven mitt.
Hold the strawberries by the stem and dip them into the tumbler up to the desired height on the strawberries.
Place the dipped strawberries on parchment paper.
Leave on the counter to dry. This may take around 2 hours depending on the temperature inside your home. (DO NOT put the strawberries in the refrigerator until the chocolate has set. Cooling too quickly will cause the chocolate to look like it has a waxy coating instead of the glossy chocolate we are after.)
*Alternately, you can heat the chocolate and coconut oil in the microwave using a glass bowl, heating in 20-second increments and stirring the chocolate in between bursts until the chocolate is smooth.
